This menu comes from Escoffier’s major work, Le Guide Culinaire, which he published in 1903. The book contained 5,000 recipes and its significance to the world of French cooking cannot be overestimated. Even today it is used as both a cook book and a text book for classic cookery. Amongst contemporary enthusiasts for the book were Kaiser Wilhelm II, the Emperor of Germany, who congratulated Escoffier in 1912 with the lines “I am the Emperor of Germany, but you are the emperor of chefs”. In 1919, Escoffier was awarded the Cross of the Légion d’Honneur. The Guide Culinaire was translated into English in 1907 and represents Escoffier’s attempt to codify and streamline French restaurant food of the time. He describes in his introduction his intention that the Guide be used to educate a younger generation of chefs, but Escoffier’s style is to provide recipes as brief descriptions and to assume that the reader will look up any difficult words, with the result that the book requires some culinary knowledge to use, and can be intimidating to domestic cooks. The book contained 17 chapters with titles like Sauces, Potages (soups) and Hors d’Oeuvres, and also included a number of recipes for Escoffier’s greatest achievements, of which this example is just one.
